Tonight ... comfort food! A simple but very tasty sauce for these store-bought potato gnocchi. I just chopped up 1 small onion, 2 zucchini and 2 striped aubergines and stir fried together until cooked through but still firm. Added the fresh gnocchi, salt & pepper to taste, a dash of rice cream and 2 spoonfuls of home-made basil pesto. Once plated I topped with parmesan-style grated vegan cheese and freshly cracked black pepper. Yummm, tacos 🌮🌮🌮 Tacos are an easy meal to switch up for a plant-based alternative. For an easy taco filling chop and fry half an onion with 2 chopped garlic cloves then crumble in half a block of tofu. In a small dish mix your taco spice mix with a bit of water to create a paste. Pour the mixture over the tofu and mix until incorporated. Fry a few more minutes until the moisture has been evaporated. For these tacos I used a jerk spice mix (from @bulkbarnfoods) and it was soo yummy. Load up your tacos with the usual - lettuce, tomato, salsa and add the tofu taco filling on top. Hot sauce is always a good idea 🌶 as is some slices of lime. Easy!

Dinner...mostly leftovers which r great! Cook once, eat several times. Just try to not warm up food too many times...take out the portion u need, warm it and put away the rest. Edamame, baked polenta with homemade tomato sauce🍅 over it, hemp hearts 💕 (not shown) generously sprinkled on top as my faux parmesan, peppers 🌶 & onions, baked potato 🥔 and steamed broccoli 🥦 Phew 😅 This meal is full of protein, magnesium, fibre, iron, healthy fats and tons of vitamins & minerals. Cinnamon Swirl, Nut Butter and Berry Chia Jam for Sweet Potato Toast 🌿 INGREDIENTS: 3 tbsp nut butter of choice Cinnamon 2 tbsp toasted coconut 1 tbsp chia seeds 1/2 cup fresh strawberries or raspberries Squeeze of lemon juice 1 tsp rice malt syrup, stevia or raw honey 🌿 METHOD: To make the jam, mash berries with a fork for a more chunky jam, or blitz quickly in a blender. Add a squeeze of lemon juice and rice malt syrup, stevia or honey. Stir in the chia seeds and let sit for 15 minutes. 🌿 To make the nut butter, add a good pinch of cinnamon to your favorite nut butter and swirl in. 🌿 To assemble the toast, spread on the nut butter, drizzle with chia jam and top with fresh berries, toasted coconut and an extra sprinkle of cinnamon. 🌿 Benefits of Sweet Potatoes: Sweet potato is a complex carbohydrate, meaning that the natural sugars that give it that rich, sweet flavor will release a consistent flow of energy into the body. I am still thrilled about finding blue spirulina in my cupboard... it must have been there for at least a year 😱. I used it to color soy yogurt and was quite happy with the result 👌.
