my version of pb&j oats ☺️ i don’t eat peanuts, i’m intolerant of almonds, cashew butter is too expensive, so sprouted pumpkin seed butter it is! the oatmeal is actually vanilla maca flavored - i added vanilla extract, cinnamon, maple syrup, and a 1/2 tsp of maca powder while they were cooking. fresh strawberries, organic strawberry preserves, and a sprinkling of dried cranberries and pumpkin seeds finish off this bowl. yummy 🍓🥜🌱

If you're looking for a dessert to serve that pleases both healthy eaters and those with a major sweet tooth... look no further! My 3 layer peanut butter cookie bars are perfectly indulgent but still made with mindful ingredients. I made this large batch a little while back and kept them in the freezer for whenever I'm in the mood. Recipe: Cookie layer: • 5 oz vanilla wafer cookies (I used a natural brand from Publix)***. • 5 tbsp coconut oil (softened). • 1/2 c roasted & salted peanuts. • 1/2 c raw sugar. Peanut butter layer: • 2/3 c creamy peanut butter. • 3 tbsp coconut oil. • 3/4 cup raw sugar. • 1 cup PB2/ peanut powder. • 1 tsp vanilla extract. Chocolate topping: • 3/4 c dark chocolate chips***. • 2 tbsp coconut oil. ***Use gluten free/dairy free options if desired. Preheat oven to 350°. Pulverize cookies and peanuts in a food processor, then stir in sugar and lastly coconut oil. Press this mixture firmly and evenly into the bottom of a 9x9 square baking pan and bake for 15-20 minutes. Allow to cool completely. For PB layer: soften peanut butter and coconut oil in a bowl and mix well. Combine with PB powder, sugar, and vanilla. Spread over cookie layer when it is fully cooled, and then put pan in freezer for at least 30 minutes to let it harden completely. For chocolate topping, melt chips and coconut oil in a bowl in the microwave on low heat, stirring regularly to prevent burning. Pour and spread over PB layer, sprinkle with sea salt if desired, then return to the freezer for 30 minutes or until hard. Slice and enjoy! Tag me if you try!

yo hey what’s up ✌🏼 — honestly I have been in such a funk lately 🙃 I haven’t really worked out in a week, I ate plenty of junk this past weekend while moving, and I’m exhausted 💤 finishing one of the toughest quarters of school has really taken its toll on me 📚 — BUT I’m getting back on the wagon one day at a time 👉🏼 I’m officially moving out of my house tomorrow, then on vacation, then starting my internship on the 2nd of July! It’s all going SUPER quick, so I’ll grabbing my food while I can 😅 — since I don’t really have a fridge rn I’ve been getting my lunch @lassens , which is a bit pricey, but I’m getting all the goods so personally, I’m willing to shell out some 💰 — here’s what went down for lunch: 1. kale kale kale 🌱 2. lemon roasted tofu 🍋 3. gauc 🥑 4. roast carrots 🥕 5. black beans + garbanzos It was delish, it was quick, and it was everything I needed today 🥗 — back to work for the rest of the day with my snacks (see my last post!!!!) and then to finish packing !!!!

Lunch • June 19th // Had the (pesto) both worlds for lunch today with some yummy apricot chai granola + papaya and of course, this pesto pasta! To make the pesto, I just blended 1/2 avocado, 1/8 cup avocado oil (can sub olive), juice from 1 lemon, 1/8 cup pistachios, 1/4 tsp salt, a few shakes of pepper, 1/8-1/4 tsp garlic powder, and 1/2 cup of basil until it was mostly smooth, threw it on some @jovialfoods farfalle, and then topped it with nutritional yeast (can sub Parmesan if you can eat dairy!) 😋💚
